Chicken Pot Pie
Casserole
When
fall arrives temperature changes and changes in meal brings me to one of my
favorite dishes chicken pot pie . This
is a hearty meal that is satisfying self comfort and fill the appetite.
I
make my chicken pot pie in two different ways using my favorite chicken,
vegetables and cream of chicken soup , but for this recipe I did not have
chicken soup and made some minor substitutions.

pie cookies that I use the Bisquick box for simplicity without all the work to
make biscuits from scratch Use
store-bought cookie dough is an even easier way to make this recipe. Everything
about this recipe is quick and makes a great dinner to have a night school or
after home from work and want an easy hot meal
ingredients
2 CHICKEN
LEG QUARTERS
2cans of mixed vegetables or frozen
bag of vegetables
½ an
onion
2stalks
celery
1cup chicken broth
1cup white cooking wine
1tablespoon cornstarch
1tablespoon butter
Salt
and pepper
Bisquick
Cover
the chicken thighs with water in a saucepan and boil until the meat falls off
the bone. Make sure to salt the water first if the chicken is good and
experienced While the chicken is cooked
cut the onion and celery and cook until tender in a pan with oil about 2
Tbsp After the chicken has cooled remove
the bones and all the chicken broth, except for one cup. The rest of the stock
can be frozen for future use Add onion ,
celery and butter in the pan with the chicken cooking wine . Once it is hot add
1 tablespoon cornstarch mixed with a little water into the chicken mixture.
Stir until the sauce begins to thicken and add more cornstarch if it is too
thin. Drain cans of vegetables and add to the mix everything together pot. Add
a little salt and pepper and pour the mixture into a baking dish Prepare your
cookie dough Bisquick according to manufacturer's instructions and pour over
chicken mixture in a casserole. Make sure you spread the mixture evenly over
Bisquick pot pie or pop open a can of Pillsbury buttermilk biscuits on top of
the pie .Bake in a pre heated 350 degrees for 35-40 minutes or until crust is
golden oven.
